Hey everyone! I love getting apples into as many recipes as I can! My kids love them and so do I. I want to welcome Tiffany today who is sharing three apple recipes with you!
Holidays are a great time to be with your family and friends to strengthen our connections and renew relationships. So put down the electronics and take time to do significant things with your beloved ones. Cooking together is a wonderful thing you should do on holidays. Taking the time to find the right recipes will help you to make the best use of the produce you have at hand, and enable you to come up with delicious meals that will have friends and family reaching for more.
Pumpkins, corn, beets, broccoli, carrots and of course, the quintessential fruit, the apple, abound, providing you with ingredients to whip up a variety of healthy meals for yourself and family.
Below are 3 recipes you can use to create the perfect meal with apples this holiday season:
Healthy Apple Muffins
Replace regular flour with whole wheat, and refined sugar with maple syrup or honey for a healthier and much tastier version of apple muffins.
Ingredients
- 2 cups whole-wheat flour
- 1.5 tsp baking powder
- 0.5 tsp baking soda
- 1 tsp cinnamon
- 0.5 tsp salt
- 1 cup grated red apple
- 1 cup red apple chopped into quarter inch cubes.
- 0.5 cup coconut or extra virgin coconut oil.
- 0.5 cup maple syrup or honey
- 2 medium eggs
- 0.5 cup full fat Greek yoghurt
- 0.5 cup applesauce
- 1 tsp vanilla extract
- 1 tbsp raw sugar for sprinkling.
Instructions
- Preheat oven to 425F and grease 12 muffin cups with non-stick cooking spray.
- Combine flour, baking powder and soda, salt and cinnamon in a large bowl, whisking well to ensure thorough mixing.
- Add in grated apple and apple cubes and mix well.
- Mix the oil and maple syrup in another bowl and whisk to combine.
- Beat in the eggs and add the yogurt, vanilla and apple sauce.
- Pour the oil and egg mixture into the dry ingredients and mix gently until well combined.
- Divide the batter evenly into the muffin cups.
- Sprinkle with sugar and place in the oven.
- Bake for 12-15 minutes or until muffins have turned golden brown.
- Place the muffins on a rack to cool and serve with beverage of your choice.
Apple Pie Pizza
This glorious version of the classic dessert will have you licking your fingers and reaching for an extra slice. Apple slices, cheddar cheese, raisins, spices and sugars help make this pizza a delectable treat that you will want to make time and again.
Ingredients
- 12 inch pizza crust
- 3 large apples thinly sliced
- 0.25 cup raisins
- 1 cup white cheddar cheese
- 1 cup fresh apple juice
- 1 tbsp corn starch
- 0.5 tsp cinnamon
- 2 tablespoons organic honey
Instructions
- Pre-heat oven to 425F
- Spray a pizza stone with cooking spray and place the pizza crust on it.
- Cook the apple juice until soft, drain juice and put aside.
- Place the apple slices on the crust.
- Combine the apple juice, cornstarch, cinnamon and honey in a saucepan and cook over medium heat until clear.
- Spread sauce over the pizza and top with raisins and cheddar cheese.
- Place in the oven and bake for 15-20 minutes or until the crust is lightly browned.
- Remove from oven and serve hot. Serves 8
Apple and Kale Salad
Just because summer is over, it does not mean that you cannot take in a healthy salad. Apples, kale and vinaigrette combine to provide tart, tangy and sweet flavors, and make a great accompaniment to meat dishes and other main meals.
Ingredients
- 1 pound kale leaves
- 2 tbsp olive oil divided
- 0.25 cup minced shallot
- 2 tsp red wine or apple cider vinegar
- 1 tsp Dijon mustard
- 1 pink lady apple, diced
- 0.25 cup currants or raisins.
- Juice from half a small lemon.
- Shave parmesan cheese for topping.
- Salt and pepper to taste
Instructions
- Sauté the shallots with half of the olive oil in a medium size pan for about 7 minutes until they are soft and light brown. Remove from fire and set aside.
- Wash and de-stem kale leaves and place in a medium sized salad bowl.
- Whisk the shallots in the remaining olive oil together with the vinegar. Pour over the kale.
- Add in the apple and raisins/currants and toss to mix.
- Top with shaved parmesan and season to taste. Serves 2
