Fall is my favorite season for so many reasons. I love the chill in the air, the leaves falling and delicious smells coming out of the kitchen. Some of my favorite meals are perfect for fall – including chili. It’s a tradition for me to make chili on the weekends and my husband and I love loading it up with our favorite toppings. Best of all, it’s easy to make and fills the house with a delicious small of fall.
Ingredients
- 2 pounds of ground beef
- 1 yellow onion, chopped
- 2 14-ounce cans diced tomatoes
- 1 14-ounce can of tomato sauce
- 2 15-ounce cans of light red kidney beans, rinsed and drained
- 2 tablespoons of chili powder {okay, this is a 6th ingredient!}
Directions
– In a large skillet, cook the ground beef and onion over medium heat until the beef is browned. Using a slotted spoon, crumble up the ground beef into small pieces.
– When ground beef and onions are cooked, drain and add to a 5 quart covered dutch oven. Add the chili powder, beans, diced tomatoes and tomato sauce and bring to a boil.
– Cover and reduce the heat to low. Let the chili simmer for 20 minutes. Uncover and simmer for an additional 5 minutes, stirring occasionally.
– Serve with your favorite toppings like sour cream and shredded cheese.
