I can not believe my son is going back to school next week! {SOB}. I’m anxious to get back into a good routine at home but I’m also going to miss him so much being home and I know his sisters will too. We are packing as much as we can into this last week – pool time, hunting for more Pokemon, a back to school jump party with his friends and a special trip to Build-A-Bear (he wants to build a Boba Fett Bear!). I also decided to make him these special Apple Cupcakes for Back to School! They are the perfect treat to get him in the mood for school or you can make them to bring to your child’s new teacher!
These Apple Cupcakes are super easy to make and your kids will love helping you!
Ingredients
- White Cake mix (eggs, oil, water)
- Red food coloring
- Wilton red sparkle icing
- Green M&M’s
- Pretzel twists
- Red mini-cupcake liners
- Mini cupcake pan (affiliate link)
- Mixing bowl
- Whisk
1. Preheat your oven to 350° in line your mini cupcake pan with your red mini cupcake liners.
2. In a large mixing bowl mix together your cake mix, eggs, oil, water, and a few drops of red gel food coloring with a whisk.
3. Use a tablespoon to scoop out your batter into your mini cupcake liners, filling about 3/4 way full with your batter.
4. Bake as directed on box (15-20 minutes, checking after 15 with a tooth pick).
5. Let cool and frost with your tube of red sparkle icing.
6. Break the sides off each pretzel twist so they look like number 7’s and stick one in the center of each cupcake for the stem.
7. Place a green M&M next to the pretzel for the leaf and enjoy these fun treats!
