I love to cook and I especially love to cook for my family – as long as they like it! I recently took part in the Country Crock Casserole Club and was asked to make the following recipe my own. It turned out SO well and was even toddler APPROVED!
I served this with some very simple BBQ chicken legs that I had thrown in the slow cooker earlier that day, and some yummy bread and Country Crock margarine.
This dish is simple enough for a weeknight meal and lovely enough for a Thanksgiving side that will be enjoyed by all!
Original Recipe from Country Crock – Thanksgiving Family Fave Veggie Casserole
Ingredients:
1/2 cup Country Crock Spread, divided
2 cups chopped onion
3/4 cup Panko bread crumbs
8 cups cooked mixed vegetables (broccoli and cauliflower florets, red pepper and/or green beans)
1 1/2 cups shredded 2% cheddar cheese, divided
Directions:
1. Preheat oven to 375 degrees. Melt 1/4 cup Country Crock spread over med-high heat in large nonstick skillet and cook onion, stirring occasionally, until golden brown, about 8 minutes. Stir in breadcrumbs and cook, stirring occasionally, until lightly toasted, about 2 minutes, remove to bowl.
2. Melt remaining 1/3 cup spread in same skillet and add vegetables, toss to coat. Pour 1/2 into shallow 2-qt baking dish. Sprinkle with 1/2 the cheese and 1/2 the bread crumb mixture. Repeat with remaining ingredients.
3. Bake until headed through and cheese is melted, about 25 minutes.
TIP: Thawed frozen vegetables or canned vegetables can be used instead of fresh.
My Modifications:
I added bacon pieces and 1/2 a packet of ranch dressing mix to the onion sauté. I also cooked frozen vegetables beforehand in the microwave instead of allowing them to cook in the oven – it saved at least 15 minutes of bake time. SOO YUMMY!
My boy LOVED it – and so did we!
