I’ll never forget when I first participated in a “Pay it Forward” initiative. I was in the drive-thru at Starbucks and it was a rather expensive order – I was picking up both breakfast and coffee for my husband and I. When I heard that the person in front of me had paid for my order, I was giddy. Of course I had to continue it on. It just feels good doing Random Acts of Kindness, right?
When I partnered with Chex Mix to create a recipe, I knew that I wanted to make a delicious snack that I could gift to friends – everyone deserves a delicious treat when they least expect it!
I love coffee and I love Chex Mix so why not a combination of the two? In this case, I bought the CHOCOLATE Chex Mix for a double dose of chocolate!
Double Chocolate Coffee Snack Mix
Ingredients
– 6 cups Chocolate Chex™ cereal
– 1 Bag of Chocolate Chips
– 2 Tablespoons of Smashed Instant Coffee
– 2 Cups Chocolate Covered Espresso Beans
Directions
– Measure out the Chocolate Chex™ cereal and place in large bowl.
– Melt chocolate chips on stove top – I add a little bit of vegetable oil to thin out the chocolate a bit.
– Add in smashed instant coffee into melted chocolate and mix.
– Pour chocolate mix into bowl of Chocolate Chex™ cereal and mix together until it’s all coated.
– Pour onto baking sheet to let cool.
– When it’s completely cool, mix in Espresso Coffee Beans.
This mix is DELICIOUS but it’s not for kids {unless you want them hopping around the house!}. Oh, no this is ALL for you and your friends! Package them up in coffee cups {psst…Starbucks gave them to me for free!} and pay it forward to a friend!
