Turkey Stuffed Green Peppers
Serves: 6
 
Ingredients
  • 1 pound of lean ground turkey
  • ¼ onion, chopped
  • 1 tsp garlic powder
  • 1 tsp cumin powder
  • 3 large green or red peppers (your choice!)
  • 1 cup fat free chicken broth
  • ¼ cup tomato sauce
  • 1½ cups cooked rice
  • olive oil spray
  • ¼ cup cheddar cheese
Instructions
  1. Heat oven to 400 degrees.
  2. Spray olive oil spray in saute pan.
  3. Add onion, garlic and cumin powder and ground turkey to pan.
  4. Season with salt and cook until ground turkey is browned.
  5. Add ¼ cup of tomato sauce and ½ cup of chicken broth to turkey, mix together and cook for 5 minutes.
  6. Add cooked rice to turkey.
  7. Wash peppers, cut in half and remove seeds.
  8. Place cut peppers in baking dish and fill with meat and rice mixture.
  9. Pour the remainder of the chicken broth on the bottom of the baking dish.
  10. (Here, I added a bit more tomato sauce to the mixture, pouring on top)
  11. Cover with foil and bake for 35 minutes.
  12. Top with cheddar cheese and bake an additional 5 minutes.
