Turkey Stuffed Green Peppers
- 1 pound of lean ground turkey
- ¼ onion, chopped
- 1 tsp garlic powder
- 1 tsp cumin powder
- 3 large green or red peppers (your choice!)
- 1 cup fat free chicken broth
- ¼ cup tomato sauce
- 1½ cups cooked rice
- olive oil spray
- ¼ cup cheddar cheese
- Heat oven to 400 degrees.
- Spray olive oil spray in saute pan.
- Add onion, garlic and cumin powder and ground turkey to pan.
- Season with salt and cook until ground turkey is browned.
- Add ¼ cup of tomato sauce and ½ cup of chicken broth to turkey, mix together and cook for 5 minutes.
- Add cooked rice to turkey.
- Wash peppers, cut in half and remove seeds.
- Place cut peppers in baking dish and fill with meat and rice mixture.
- Pour the remainder of the chicken broth on the bottom of the baking dish.
- (Here, I added a bit more tomato sauce to the mixture, pouring on top)
- Cover with foil and bake for 35 minutes.
- Top with cheddar cheese and bake an additional 5 minutes.
