Last year, my Mom was diagnosed with diabetes. It was hard for her, especially because she has such a sweet tooth, but she’s cut out all sugar from her diet. Her health has drastically gotten better and over the summer, I decided that I wanted to cut sugar from my diet too. Once you start being aware of what you’re eating, you’d be surprised how much sugar is in everything you eat! After all, the average American consumes more than 22 teaspoons of added sugar a day. That’s more than TRIPLE the recommended amount for women and more than DOUBLE the recommended amount for men!
During this time of year, it can be hard not to indulge in all the sugar-laden treats that are all around us. It sometimes seems that during the month of December, it’s all about SUGAR! That’s why I decided to make the perfect treat that both my Mom and I can enjoy – and that my husband and kids loved too – that has less added sugar AND calories!
I’ve always been a fan of EASY recipes that don’t use too many ingredients and this recipe for Peanut Butter cookies is exactly that. Using only 4 ingredients, including the SPLENDA® Sugar Blend. SPLENDA® Sugar Blend is a mix of pure sugar and SPLENDA® Brand Sweetener. It provides functional properties for your baked goods –such as browning, volume, texture and moisture retention – but with only half the calories and carbohydrate of sugar!
- 1 Cup of Creamy Natural Peanut Butter
- ½ Cup of SPLENDA® Sugar Blend
- 1 Egg
- 1 Tablespoon of Vanilla
- Preheat oven to 350 degrees.
- Mix all ingredients together.
- Scoop mix onto baking pan {about the size of a walnut}.
- Dip a fork into the SPLENDA® Sugar Blend and make a criss-cross pattern on top of the cookie.
- Bake for 12 minutes.
- Let cool and then enjoy!
