When the holidays roll around, I love baking cookies with my kids. It’s such a fun tradition that we do each year. This year though, my son and I have been so sick and I wasn’t up for some complicated cookie recipes – well, I never really am. I like EASY recipes! So when I found Nestlé Toll House Rolled and Ready Cookie Dough at the store, I was so excited to get to baking.
I decided to make Gingerbread Ice Cream Sandwiches with the Nestlé Toll House Rolled and Ready Cookie Dough that I bought. Confession – I didn’t have a round cookie cutter, so I used the bottom of a measuring cup and it worked perfectly! Within minutes of putting the cookie sheet in the oven, my house was smelling of gingerbread and it just smelled SO good! I wish there was a way to just keep that smell going throughout the holiday season – although, I guess I would have a lot of cookies then!
Oh so easy and oh so delicious! Just put some vanilla bean ice cream {wouldn’t peppermint be delicious too?!} between the two cookies and you’re in for a treat! I’m now a huge fan of the Nestlé Toll House Rolled and Ready Cookie Dough – it will save me so much more time in the kitchen but still will provide fun and memories with the family!

I very recently found out about this dough – already rolled! I can imagine picking it up when I have an unexpected opportunity to make cookies but don’t have the time!!! This idea of making ice cream sandwiches – wow! Great idea!
