One of the biggest ways I’ve found to save our budget and still eat healthier is to stock up on things when they are on sale and then find creative ways to doctor up the prepackaged deals to create balanced meals. These are quick and easy ways to make a full meal or to Bulk Prep and freeze our own microwaveable lunches. Here are a few of my favorite recipes.
Chicken Fried Rice
1 Box Betty Crocker Chicken Helper Chicken Fried Rice
Chicken (I only use 1/2# to save money)
4 Eggs
1 Can Corn (or partial package of frozen corn)
Chopped Onion
Optional if your family likes: Add fresh carrots and/or broccoli
Prepare per package instructions and add the additional items before the simmering process. Serve for dinner or package as above for the freezer.
Cheesy Enchiladas
1 Box Betty Crocker Helper Chicken Cheesy Chicken or Hamburger Enchilada
Meat (I only use 1/2# to save money)
1 Can Corn (or partial frozen bag)
Chopped Onion
1 Can of Enchilada Sauce
4oz Shredded Cheese
Tortillas
Option additions: Jalapenos, Re fried Beans
Prepare per package instructions, adding veggies before simmering. When complete, stuff the tortillas with the mix and re fried beans then place in a baking dish or individual containers for the freezer. Top with sauce and cheese. If making for dinner, bake at 350 for about 10 minutes, then serve.
Scalloped Potatoes & Ham
1 Boxed Potatoes {Any Flavor}
1/2″ Cubed Ham {I like to buy it on sale at Easter and freeze in meal portions}
Chopped Onion
Chopped Broccoli
Prepare per package instructions, add ham and veggies before simmering. Serve or make individual portions.

Meats and cheese are the two most expensive ingredients in the kitchen. I use cheap shoulder and rump cuts th stretch my meat dollar. I use strong flavoured cheeses to stretch my cheese dollar because a little tastes a long way. 🙂
