My family had the opportunity to try out Kikkoman and we would love to entice you with a few of our favorite recipes! First up, my Husband loved the Crab Stuffed Mushrooms. We had these along with our dinner, but they make the perfect hors d’oeuvres for a low-key family get together to a glitzy New Years Eve bash! So easy and delish!
CRAB-STUFFED MUSHROOMS
- 1 pound large fresh mushrooms
- 4 tablespoons butter, divided
- 1/4 cup plus 2 tablespoons Kikkoman Panko Bread Crumbs
- 1/2 cup shredded fresh, canned or imitation crabmeat
- 1/4 teaspoon onion powder
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
Heat oven to 375 degrees. Wipe mushrooms gently with a damp paper towel, remove and finely chop stems. In a large skillet over medium healt, melt 3 tablespoons of the butter. Add mushroom stems and cook for 5 minutes or until tender. Remove from heat and stir in 1/4 cup of the Panko, the shredded crab, onion powder, salt and pepper.
Stuff mushroom caps with crab mixture and place them stuffing side up on an ungreased rimmed baking sheet. In a small bowl, combine remaining butter and Panko. Sprinkle evenly over the tops of the mushrooms and bake for 15 minutes. Makes 10 appetizers.
My favorite was the wonderfully crispy coffee cake recipe! I loved it for dessert… and then the morning after with my coffee!
CRUNCHY TOPPING COFFEE CAKE
- 3 cups flour
- 3/4 cups granulated sugar
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2/3 cup butter flavor shortening
- 2 eggs, beaten
- 1 cup buttermilk
Topping:
- 1 cup brown sugar
- 3 teaspoons cinnamon
- 1 stick melted butter
- 1 cup Kikkoman Panko Breadcrumbs
- 3/4 cup chopped pecans
Sift together dry ingredients, flour, sugar, baking powder and salt. Cut in shortening until mixture looks like coarse meal. Combine egg and buttermilk. Stir into flour mixture. Spread into a greased rectangle aluminum dessert sheet (9″X13″). Sprinkle with topping and bake at 350 degrees for 30 minutes until firm in the middle.
And by popular vote, the kids loved the apple-cranberry crisp, just a little warm and with milk!
APPLE-CRANBERRY CRISP
- 3-4 large assorted cooking apples, about 1 1/2 pounds
- 1/3 cup dried cranberries
- 1/4 cup plus 1/3 cup sugar, divided
- 2 teaspoons plus 1/3 cup all-purpose flour, divided
- 2/3 cup Kikkoman Panko Bread Crumbs
- 1 1/2 teaspoons ground cinnamon
- 1/2 cup butter, cut into small pieces
Peel, core and cut apples into 1/4 inch thick slices, measure out 5 cups and combine with cranberries in a 2 quart baking dish. Add 1/4 cup sugar and 2 teaspoons four; toss well to evenly coat all pieces. Combine Panko, cinnamon and remaining 1/3 cup each sugar and flour in medium bowl. Cut in butter, until mixture resembles coarse crumbs; sprinkle evenly over fruit. Bake at 350 degrees for 35 minutes. Cool 5 minutes. Serve warm or at room temperature.
