Every week, I usually comb through Pinterest trying to find menu ideas for the week. Right now, I’m on a low carb diet while the rest of my family is not so I’m always looking for recipes that I can modify and will make all of us happy. I kept coming across this amazing Bacon Cheeseburger Pie that had me drooling and I knew I had to make my own low carb bacon cheeseburger casserole. It called for a crust but I figured I could still get that delicious taste without it. So, my picture below isn’t the best because it was 7 at night and I was hungry – but let me tell you, it was DELICIOUS! It tasted just like a bacon cheeseburger but is completely low carb for those who are looking to cut the carbs in their diet.
Ingredients
– 1 pound of ground beef
– 6 pieces of bacon
– 1 small onion, chopped {or frozen onions – I like easy!}
– 1 egg
– Burger Seasoning {to taste}
– Garlic Salt {to taste}
– 1/2 cup of mayo
– 1/4 cup of yellow mustard
– Chopped Dill Pickles
– 8 oz. Mild Cheddar Cheese
Directions
– Fry bacon in frying pan. Drain and set aside.
– Brown ground beef in frying pan. Add burger seasoning and garlic salt to taste.
– Mix together ground beef, chopped bacon, chopped onion, chopped pickles, egg, mustard and mayo.
– Pour mixture into casserole pan. Top with shredded cheese.
– Bake for 30 minutes at 350 degrees.
– Enjoy!
My husband added some ketchup to his plate and loved the addition of it to the casserole – since I’m staying away from the added sugar, I skipped it. It was DELICIOUS and filling! This serves about 4 people.

This sounds like an interesting casserole to try out. I didn’t they had burger seasonings in stores.

This is an interesting recipe, I would not consider this a casserole, it sounds more like a meatloaf. I would love to try this, but I would use turkey bacon and I would substitute chicken or turkey meat in place of the beef.
