I recently shared my low carb journey in a post and I’ve had lots of people ask me what I exactly eat and what are some of my favorite recipes. Below are some low carb meal ideas on what to eat throughout the day, my favorite low carb sites and resources.
Breakfast
Breakfast is definitely easy if you’re eating low carb. Eggs and bacon, need I say more? I also like to mix eggs, ham, cheese and spinach together and then pour into muffin tins. You can keep these in the fridge and just heat up in the morning for a quick meal! Omelets are also delicious – load it up with your meat of choice, cheese, mushrooms, spinach, etc! Super filling!
Remember, no fruit! If you’re doing something like South Beach, you can do berries but I haven’t introduced them back into my diet yet.
Lunch
– Salad {don’t use regular iceberg lettuce, get some romaine or something similar!} and load it up with different kinds of meat and cheese. I usually use ranch dressing – make sure to check your bottle for hidden carbs and sugar!
– Steak or chicken caesar salad
– Tuna or chicken salad – mix in mayo and celery. Put it on some lettuce and roll it up.
– Sandwiches using lettuce as the bun
– Mushroom Pizzas – low sugar pizza sauce, cheese and pepperoni
Dinner
– Any kind of meat! I like to do steak, chicken or pork chops. Some great chicken dinners include: melting spinach, cheese and mushrooms on top of chicken, coating chicken with ranch and cheese and baking, coating chicken with egg and then crushed pork rinds and seasoning for that “fried taste”. – Taco salad
– Chicken Fajita Bake – one of my favorite meals!
– Buffalo chicken wings
– Meatloaf {use crushed pork rinds instead of bread crumbs!}
– Salmon
– Burgers {no bun or use portobello mushrooms as buns}
– Meatballs with low sugar pasta sauce and melted provolone cheese
Ideas for Side Dishes
– Veggies like green beans and bacon, broccoli, radishes, cauliflower
– Mashed cauliflower – mash with cream cheese and shredded cheese, then bake. It’s like faux mashed potatoes!
– Mushrooms with melted cheese
Snacks
– Celery with peanut butter or cream cheese
– Deli meat wrapped around a string cheese
– Salami and cream cheese roll-ups
– Nuts {Sort these into serving sizes because they are easy to overeat!}
– Jerky
– Hard-boiled eggs
– Deviled eggs
– Sugar-free jello
– Pork rinds
