Before you had a chance to even realize it, winter has gone and summer with its glorious sunny days is here! What better way to spend a beautiful summer afternoon than at a BBQ. Invite your family and friends over for a low key and low carb summer BBQ. Dust off that backyard you haven’t used all winter and get ready for a feast!
After a pretty freezing and dormant winter, we end up being a little surprised of the winter weight that needs to be shed off. Following a low-carb or keto diet will not only jump start your metabolism but will surely increase weight loss so you can comfortably get ready for that summer swimsuit! Having a BBQ doesn’t mean you won’t be able to feast on delicious treats; there are a ton of healthy recipes that you can make guilt-free. To barbeque healthily in the summer, here are a few recipes you can try that are guaranteed to be a hit!
Cauliflower Salad
One staple of salads at a BBQ is either coleslaw or potato salad. But since you’re cutting carbs, replace the potatoes with cauliflower and you will never know the difference. This juicy recipe calls for:
25 oz. large cauliflower
salt and ground black pepper
½ cup water
5 oz. bacon
3 celery stalks
½ red onion
2 tbsp fresh chives
Chop the cauliflower in large chunks and place it in a makeshift aluminum foil bowl. Pour ¼ water into each bowl and wrap tightly with another aluminum foil sheet and make sure water doesn’t escape. Grill for 15-20 minutes. Lay bacon slices on the other side of the grill for 10-15 minutes till they’re crispy. Chop celery, dice onions and chives and once bacon is cooked, chop into fine pieces. Carefully unwrap cauliflower and allow to cool before chopping into bite sized chunks. Add everything in a large bowl with your own homemade dressing. You can add 1 ½ cups mayonnaise, ¾ tbsp Dijon mustard, ¾ tbsp cider vinegar, a pinch of salt and pepper. Stir well, and enjoy!
Crispy Chicken Wings
Believe it or not, you can make crispy chicken wings without using flour batter! Save up all those calories by making these flavorful and low-carb chicken wings:
2 lbs chicken wings
1½ tsp sea salt
¾ cup coconut aminos
¼ tsp ground ginger
¼ tsp onion powder
¼ tsp garlic powder
¼ tsp chili flakes
Preheat the oven to 450F then salt the wings and place the wings on a baking sheet with a wire rack to help it cook evenly. Bake them for 45 minutes as you prepare your sauce. Over medium heat, add the coconut to a skillet along with the onion and garlic powder and chili flakes. Continue to stir until sauce simmers, reduce heat and allow to thicken. Once all is done, dip your chicken in the sauce and serve on a platter.
Homemade BBQ Ribs
No BBQ is complete without ribs! This dish is smoky, tangy and downright satisfying. All you need is 3 pounds of thin spare ribs and your own homemade BBQ sauce. Since you can’t really use condiments like bottled barbeque sauce due to their high sugar levels, you need to make your own with a few simple ingredients.
Homemade BBQ Sauce
3 tbsp olive oil
1 tbsp tomato paste
½ finely chopped yellow onion
1 tbsp chili powder
2 tsp garlic powder
2 tsp fennel seeds
1 tsp ground cumin
½ tsp cayenne pepper
2 tsp salt
14 oz. canned whole tomatoes
2 tbsp cider vinegar
To make the sauce, heat oil in a saucepan, fry the onions and add in the tomato paste. Add a couple of tablespoons of water and let it simmer for 10-15 minutes. Add the rest of the spices, vinegar, tomatoes and allow to boil. Lower heat and leave to simmer for 20 minutes till it becomes thick. Blend the sauce with a hand blender for a smoother texture. To make the ribs, season them with salt and add them to a slow cooker for 6-8 hours with half of your BBQ sauce. When done, allow to cool and then grill them for 15 minutes till surface of meat is crispy.
