Are you looking for an easy and tasty snack for you and your family? Look no further than these Mini Spinach and Cheese Wheat Pizzas! It’s also easy enough for your kids to help make these with you. If you’re looking to make a quick snack for the kid after school this is the one. It’s great to enjoy as you sit at the kitchen table talking about your child’s school day or while they are doing homework.
They are also great as a weekend treat. I love that you can switch up the ingredients by using what your family likes. Best of all, they are FAST to make so you don’t have to hear “Are they done yet?” a million times – maybe only once or twice.
Ingredients for Mini Spinach and Cheese Wheat Pizzas
4 whole wheat english muffins, split in half
½ cup of pizza sauce (or more as desired)
½ cup of shredded mozzarella cheese (or more as desired)
1 large tomato, sliced into 8
¼ cup of spinach, roughly chopped (or more as desired)
Optional ingredients:
Pinch of dried basil, pinch of dried oregano
Directions
Preheat oven to 400 degrees.
On each slice of english muffins, add 3-4 teaspoons of pizza sauce, layer with a tomato slice, then layer with one or teaspoons of spinach, top with a layer of 2-3 teaspoons of cheese. If desired, sprinkle a pinch of basil and oregano to each pizza.
Place pizza muffins on a non greased baking pan and put in the oven for 7 minutes, or until cheese melts.

This sounds great! I’ve been on a real pizza kick lately. I’ve been making little flatbreads in the morning, then adding toppings and microwaving it at night. I’ve been using bottled sauce and adding crushed fennel and basil flavored olive oil, shredded mozzarella and then burying it with parmesean after coming out of the microwave. I need to try this, as I doubt I’ll be able to keep up to making the flatbreads all the time.
