For some reason I have been craving stuffed green peppers. I must have seen them on Pinterest or something so I went in search of a recipe and found this great one from Skinny Taste for Turkey Stuffed Peppers.
I omitted a few things only because I like to get my recipes done faster or because I didn’t have the ingredients on hand. It had been a few years since we had stuffed green peppers and my husband wasn’t too sure of me using ground turkey but it was delicious!
Turkey Stuffed Green Peppers
Serves: 6
Ingredients
- 1 pound of lean ground turkey
- ¼ onion, chopped
- 1 tsp garlic powder
- 1 tsp cumin powder
- 3 large green or red peppers (your choice!)
- 1 cup fat free chicken broth
- ¼ cup tomato sauce
- 1½ cups cooked rice
- olive oil spray
- ¼ cup cheddar cheese
Instructions
- Heat oven to 400 degrees.
- Spray olive oil spray in saute pan.
- Add onion, garlic and cumin powder and ground turkey to pan.
- Season with salt and cook until ground turkey is browned.
- Add ¼ cup of tomato sauce and ½ cup of chicken broth to turkey, mix together and cook for 5 minutes.
- Add cooked rice to turkey.
- Wash peppers, cut in half and remove seeds.
- Place cut peppers in baking dish and fill with meat and rice mixture.
- Pour the remainder of the chicken broth on the bottom of the baking dish.
- (Here, I added a bit more tomato sauce to the mixture, pouring on top)
- Cover with foil and bake for 35 minutes.
- Top with cheddar cheese and bake an additional 5 minutes.
Mmmm…. we have a lot of green peppers coming up in our garden now and I’ve been looking for some new stuffed green pepper recipes! We are vegetarians, but I can easily substitute the 2 meat items. Thanks for the recipe!

I’ve never had stuffed peppers either. I don’t like green peppers, but I bet these would be good with yellow or orange!

We love stuffed peppers here at our house. I always use hamburger in mine, but this would be a change to add turkey instead. A good way of using that left over turkey on holidays. We like them made with some corn added to the mixture to. Try it you’ll like it too
