Heath and I are a big fan of Spinach Dip! I firmly believe that PJ’s Tavern has the best Spinach Dip out of any other restaurant.
But, as you know, I wanted to find a healthy Spinach Dip and luckily I found one on Eating Well’s website! The recipe is below:
Ingredients:
1 Small Shallot
1 5 ounce can of Water Chesnuts
1/2 Cup Reduced Fat Cream Cheese
1/2 Cup Reduced Fat Cottage Cheese
1/4 Cup Plain Yogurt
1 Tablespoon Lemon Juice
1/2 Teaspoon Salt
Pepper, To Taste
6 Ounces Baby Spinach
2 Tablespoons Chopped Fresh Chives
Now, I made a few changes to this recipe. I didn’t add the Water Chesnuts, because I just didn’t have them.
Instead of the 1/4 Cup of yogurt I used 1/4 Cup of Fat Free Sour Cream. I did use a whole shallot, and I wish I would have used half a shallot, like the comments suggested.
Now, what to dip with this Spinach Dip?
I cut up some celery and some green peppers, but I wanted some CHIPS!
So I found this super easy, super fast recipe, also from Eating Well’s website right HERE. These are seriously good.
