So tonight, for the second time in my life, I made lasagna.
Let me tell you about the first time.
I was only 18. So this was 7 years ago. I had just starting dating Heath and decided I was going to make him a home cooked meal. Why I decided lasagna, I have no idea. So I went to the grocery store (WITH my Mom!) and she helped me pick out the ingredients. Then I went to Heath’s to make this delicious home cooked lasagna by myself.
It was not good. Oh, Heath said it was and even helped himself to a second helping. But the noodles were hard and crispy. (Yes, I swear I boiled the noodles!) I just remember being extremely disappointed. And obviously it scarred me for life because I never made lasagna again.
Until tonight.
Three Pugs & A Baby tweeted last night that she was going to make spinach lasagna. I let her know how good that sounded and she let me know when she put up her recipe post.
Luckily, I had all the ingredients on hand. Heath wanted me to do ground turkey at first, but then we decided to do the spinach. If you’re wanting to try ground turkey, Jennifer suggested sauteing the turkey with garlic, pepper, salt and parsley!
I didn’t take awesome step by step pictures like Jennifer did, but I did take a picture of the end result.
It was delicious. Like sooooo good. So check out the recipe again and then go make it. You won’t have any regrets.

The first homemade lasagna I had was one of my uncle's ex-girlfriends. Who was from Sicily. Who barely spoke English.
It. Took. EIGHT. Hours. And we were dying of hunger. And it was weird. Apparently, the authentic stuff requires layers of hard boiled egg and nutmeg and sausage and all kinds of stuff.
Definitely not worth an eight hour wait.

I am trying to imagine my younger daughter's face of horror when I tell her I am making spinach lasagna! That look alone would make this recipe worth trying! I am not much of a cook, but I may have to give this a try.
